CHE 3400 - FOOD AND NUTRITION CHEMISTRY credits: 4.0 Will cover the nutritional needs of humans and how various diets can meet these needs. It will focus on the biological and chemical basis of nutrition, as well as how science is involved in cooking techniques. It is designed for science majors who have a solid background in biochemistry. Objectives: A) Describe the nutritional needs of average humans, including both macronutrients and micronutrients; B) Describe various dietary plans and how they meet nutritional needs; C) Explain the science behind cooking techniques. Method of Instruction: Lectures, group work in class, and laboratory. Method of Evaluation: Exams and quizzes: 50%, Final project: 20%, Participation: 5%, and Laboratory: 25%. LAB FEE: $75.00.
